Wacky Cake Cupcakes – Depression-Era Chocolate Recipe

So I have been trying to re-ignite my inspiration with cooking. Life getting busy (especially at the end of a school year) often I find myself getting into a rut that takes a min to get out of. So I have been watching Nicole from AllRecipes on Youtube to help with that.

One of her comfort food videos that she shared was this one for Wacky Cake. Its a depression era chocolate cake that looked so amazing that Kayla thought it would be a great sweet treat for the last day of school.

So last night while I was waiting for my son's bus to come back from Prom so we could go pick him up (It was being held 45 mins away from his school), I tried it out. At first, it felt so weird to not use milk or eggs but the vinegar baking soda combo made the best texture of cake. I definitely would recommend again!

I ended up making them into cupcakes and sprinkled some powdered sugar for decoration on top - It was moist, tasty and definitely something I would make for birthdays and more!

**Note, with putting into cupcakes, I only baked it about 15mins - so keep an eye on that so that you don't overcook, the recipe called for 30-40mins but that was the full sheet cake.
